Quick & Easy Shrimp with Broccoli


Ingredients:

2 cloves garlic
1 – 2 heads of broccoli – approximately 3 cups (cleaned and cut into florets)
1 pound frozen cooked shrimp (medium or large)
1 tablespoon olive oil
Pepper to taste
Crushed red pepper to taste (optional or serve on the size)
Parmesan cheese to sprinkle on top or serve on the side

Preparation:
Thaw frozen shrimp by placing in a colander and running cold water over them (or follow thawing instructions on the package). Pat dry with paper towels. I like to remove and discard the tails but you can leave them on to add more flavor. You can thaw them ahead of time and place them in an airtight container in the refrigerator until ready to use.

Heat oil in pan. Saute garlic for about 1 minute. Add broccoli and 2 tablespoons water. Saute approximately 4-5 minutes. Add more water if needed and cover to steam and retain liquid. Add shrimp and season with black pepper. Heat through approximately 2-3 minutes. Serve with crushed red pepper and parmesan cheese.

Makes approximately 3-4 servings. Makes a perfect lunch leftover to heat and serve.
