Easy Microwave Black Bean & Cheese Nachos

Prep Time: 10 mins       Cook Time: 2-3 minutes       Servings: 2

These nachos are a perfect quick and easy snack or lunch time treat. I honestly don’t measure. The ingredients are estimates and should be adjusted according to your taste.

Ingredients:
2-3 Cups Tortilla Chips (about 25-30 chips)
¼ cup black beans (canned – rinsed and drained)
3 ounces shredded Mexican Style 4 cheese blend
3 ounces shredded mozzarella cheese
Jalapenos slices (fresh or canned) – optional
Your Favorite Salsa (garnish to taste)
Sour cream (dollop for garnish)

Directions:
Place tortillas in a single layer on a 10” microwave safe plate. Top with half of the black beans and cheese. Sprinkle half of the jalapenos. Layer the remaining chips on top. Then sprinkle the remaining cheese, black beans and jalapenos. Microwave for 1 ½ – 3 minutes or until cheese is melted and gooey. Microwaves may vary.

Top with salsa and sour cream or serve on the side.
