Spicy Crunchy Chickpeas
This is a perfect healthy high protein snack.
Ingredients:
1 can garbanzo beans (or 2 cans to make a double batch)
cayenne pepper to taste (or seasoning of your choice)
paprika
black pepper
olive oil
salt
Directions:
Preheat oven to 400 degrees. Rinse and drain garbanzo beans. Wipe dry with paper towels. This recipe works best if you let them air dry for a while before baking. But if you don’t want to wait just cook them a little longer. I usually remove most of the loose skin after drying them. You don’t have to but they cook more quickly and might burn while baking. Drizzle with olive oil and mix in spices to taste. Line a baking sheet with aluminum foil (or parchment paper). Spread mixture evenly in a single layer and sprinkle with a little more cayenne pepper if you want them extra spicy. Bake for 30 to 40 minutes or until brown and crispy.
* Helpful hint: These are so delicious you probably won’t have any left. But if you do, store them in an open container. If sealed they will lose their crunch. They will still taste good – but they’re not the same. 🙂
